I’m thankful that getting my kids to eat breakfast, hasn’t been an issue. I hear for some families, it is a hard part of the day. So I am glad mine willingly eat breakfast every morning.
I try to make it simple. Juice, a fresh fruit, and a carb…. a muffin, toast, croissant, oatmeal, or maybe a bagel.
I am lucky my kids are both healthy eaters. They love all fruits, most vegetables, and some other healthy stuff. While may son would prefer to fill every meal with carbs… bread, macaroni, rice, bagels, muffins, etc.; he’s still a little bit of a work in progress. My daughter though, she eats everything. She will try anything I put in front of her. From an early age, I told her – “just try it once, and if you decide you don’t like it, you never have to try it again”. And I love that she embraces that philosophy!
But recently, looking at how much protein they’ve been getting each day (not enough), I decided I should try and get more energizing protein in them, to start their day.
Looking at weekday breakfasts, two issues came up:
- THE AMOUNT OF TIME I HAVE TO COOK BEFORE SCHOOL (not a lot)
- THE BREAKFAST BETTER BE TASTY (or they won’t want to eat it at 6am)
That’s when I stumbled upon EGG MUFFINS! AHHH-AAAAA! It was like a lightbulb moment.
Why? Several reasons:
- They’re DELICIOUS!
- You can add different ingredients and each time it’s a different egg muffin!
- They can be made the night before, the week before, the month before. They re-heat so well!
- My kids LOVE them.
My favorite ingredients are cheese, a meat (bacon – YUM), and peppers and onions. But there are so many options… mushrooms, tomatoes, feta cheese, mozzarella, pesto, sausage…. the combinations are never-ending!
See for yourself… make a batch of egg muffins (the mini ones are so cute too!)… and tell me what you (and your kids) think!

Wow! Thank you so much for this really wonderful idea for breakfast! It can be a hit and miss for my kids with what they want to eat. They can always use a bit more protein in their diets! I’ll have to try this one out.

This seems like a great option for my toddler, especially when we are on the go or need a quick snack. He loves eggs and veggies. I think the muffin tins are a good portion size for kids.
Perfect portion size for kids… PLUS, you can add his favorite ingredients in!
I love quiche muffins for a quick breakfast meals! You can take them on the go, pack them full of nutrients! Win-win
